In this class Laura will show her evolution and interpretation of a French classical pastry technique known as Biscuit Joconde Imprimé. It is basically a BAKING technique that enables to create naked cakes with a surprising painting effect. It can be used for traditional sponge cake/buttercream inside structures, but it also allows to adopt an entremets inside structure, with creamy and soft fillings like mousse or bavorois (bavarian), and it can even be used for semifreddo or ice-cream cakes, because it doesn’t cause any condensation problem when stored in a fridge and remains soft even when frozen.
Laura will teach each student the process for making the cake. After they have baked she will show you how to cut the cake in order to use with a pastry ring and build your entremet, semifreddo or normal cake inside of it.
